Convoluted Disillusion

I whipped up this spectacular recipe this evening, I&#8217;m serving it with a lovely Barefoot Moscato! 

Spelt flour crust:
Preheat oven to 400 degrees.

1&#160;1/2 cups spelt flour
1 Tablespoon baking powder
1/2 teaspoon sea salt
1/2 cup water 
2 Tablespoons olive oil

1. Mix dry ingredients together in a bowl.
2. Add wet ingredients.
3. Transfer dough to a floured counter surface and knead for at least 5-7 minutes. 

Let the dough rest in a baggy while you prepare the moxarella.

Moxarella cheese:
1/4 cup cashews (soaked in water for a few hours then drained)
1 cup HOT water
2 Tablespoons + 1 teaspoon tapioca starch
1 Tablespoon extra virgin olive oil
1 small clove of garlic, minced
3/4 teaspoon sea salt
1 teaspoon lemon juice

1.Blend all the ingredients together in a blender (I used my single serve magic bullet)

2. Pour that shit in a small pot, stir it often over medium high heat. It&#8217;ll start to bubble and get sexy, kinda like normal Cheese would&#8230;. Then just turn your heat down a bit and continue to stir constantly to not burn the bottom layer.
3. Keep going until it&#8217;s nice a thick! When it looks like really melted dairy cheese you can let it cool. 

(My source for the moxarella is onegreenplanet.org they have tones of delish vegan recipes)

I then cut up my toppings, green peppers, onions, roma tomatoes, artichoke, and my favourite, pine nuts! 

I greased a baking sheet and spread out my dough and baked it for 10 minutes, pulled it out then added the sauce (I just buy one&#8230; Super lazy) the toppings, moxarella, then more toppings! I then continued to bake for an additional 10 minutes, then broiled for about 3 minutes to get the cheese to brown! 

Voila!! 

I then let it sit for 5 minutes, then I cut up this beautiful creature and ate it!
